This is a "healthy" gumbo recipe. The main thing it does is leave out the roux. But, with all the other southern goodness, it is still mighty tasty. Keep with the healthy theme by serving over whole grain brown rice.
- 2 lbs shrimp
- 1 cup bell pepper, chopped
- 1 onion, chopped
- 2 cups okra, cut (frozen is fine)
- 1 8oz can tomato sauce
- 2 15oz cans diced petite tomatoes
- Zattarains liquid crab boil to taste
- 2 t oil
Cover shrimp with water in a large pot. Add salt and crab boil to water, heat on high.
Add 2 teaspoons of oil in a large skillet. Add onions and bell pepper and saute. Add the okra, tomato sauce and tomatoes to the skillet and allow to simmer while shrimp is coming to a boil.
Once the shrimp comes to a boil, add the skillet ingredients to the pot and simmer for 2 hour.
Keep the dish healthy be serving over whole grain brown rice.
